Description

Mini chopped cheeseburger sliders with melty cheese, tangy pickle relish, and spicy mayo—perfect for game day or family dinner.


Ingredients

  • 12 small dinner rolls
  • 1 lb (450 g) lean ground beef
  • 1 small sweet onion, diced
  • 1 Tbsp extra-virgin olive oil
  • 1 tsp kosher salt
  • ¼ tsp black pepper
  • ⅓ cup dill pickle relish
  • ¼ cup ketchup
  • ¼ cup mayonnaise
  • 1 tsp Sriracha hot sauce
  • 6 slices American cheese (or Kraft Singles)


Instructions

  1. Preheat your oven to 400 °F (200 °C) and spray a 9×13″ pan with nonstick spray. Place bottom halves of rolls in the pan.
  2. In a small bowl, whisk together mayonnaise and Sriracha; set aside.
  3. Heat olive oil in a skillet over medium-high. Add diced onion and ground beef; cook until beef is browned and onions translucent, about 5 minutes. Drain excess fat.
  4. Season with salt and pepper; stir in dill pickle relish.
  5. Spread ketchup onto roll bottoms, top evenly with beef mixture, then place cheese slices over meat.
  6. Spread spicy mayo on roll tops; place them on cheese.
  7. Bake for 5–10 minutes until cheese melts and rolls are toasted.
  8. Serve immediately—great with fries, onion rings, or a side salad.

Notes

  • Store leftovers sealed in the fridge for up to 2 days; reheat in oven or air fryer to crisp rolls.
  • Swap American cheese for cheddar or pepper jack for a different flavor.
  • Add extra condiments or fresh toppings like lettuce and tomato after baking if desired.
