Description
Rich, chocolaty homemade fudge Pop-Tarts with a crisp pastry shell and gooey chocolate filling, perfect for breakfast or dessert.

- 2 1/2 cups all-purpose flour
- 1 tbsp granulated sugar
- 1 tsp salt
- 1 cup unsalted butter, cold and cubed
- 6 tbsp ice water
- 1 cup chocolate chips or chopped chocolate
- 1/2 cup heavy cream
- 1/2 tsp vanilla extract
- 1 egg (for egg wash)
- 1 cup powdered sugar
- 2 tbsp cocoa powder
- 2–3 tbsp milk
- Sprinkles (optional)
Instructions
- In a large bowl, mix flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Add ice water one tablespoon at a time, mixing until dough forms. Divide dough in half, shape into discs, wrap in plastic, and chill for 30 minutes.
- While dough chills, make the fudge filling: Heat heavy cream until hot but not boiling. Pour over chocolate chips and let sit 1-2 minutes, then stir until smooth. Add vanilla extract and let cool slightly.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out each dough disc on a floured surface to about 1/8-inch thickness. Cut into rectangles (about 3×4 inches).
- Place half of the rectangles on the baking sheet. Add a spoonful of fudge filling to the center of each, leaving a border around the edges.
- Brush the edges with egg wash, place a second rectangle on top, and press edges to seal. Crimp with a fork.
- Prick the tops with a fork, brush with egg wash, and bake for 20-25 minutes or until golden brown. Cool on a wire rack.
- Make the glaze by mixing powdered sugar, cocoa powder, and milk until smooth. Spread over cooled Pop-Tarts and add sprinkles if desired.
Notes
- Ensure dough stays cold while working for the flakiest texture.
- Leftover Pop-Tarts can be stored in an airtight container for up to 3 days.
- Microwave for a few seconds before serving for a warm treat.
