  • 1 teaspoon coconut oil


Instructions

  1. Pit and Process Dates: Pit the fresh dates and place them into a food processor. Add almond flour, sunflower seed butter, vanilla extract, salt, and 2 tablespoons of water to the processor. Pulse the mixture until it achieves a cookie dough-like texture, ensuring everything is well combined.
  2. Adjust Consistency: Check the dough’s texture and if it’s too crumbly, add the remaining tablespoon of water gradually until you get a sticky yet moldable dough that holds together well.
  3. Press into Pan: Line an 8×8 inch baking pan with parchment paper. Press the dough evenly into the prepared pan, making sure it’s firmly packed down and smooth on top.
  4. Melt Chocolate: In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips together with the coconut oil until smooth and glossy.
  5. Top and Chill: Pour the melted chocolate over the dough in the pan and spread it uniformly with a spatula. Place the pan in the refrigerator and chill for about 30 minutes or until the chocolate layer is fully set.
  6. Slice and Enjoy: Once the bars are set, lift them out of the pan using the parchment paper. Slice into 12 bars and store them in the refrigerator to keep them firm and fresh.
