- 1/2 cup (1 stick) unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup fresh strawberries, hulled and halved
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips (for ganache)
Instructions
- Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
- In a medium bowl, mix melted butter and sugar until combined. Add eggs and vanilla, and whisk until smooth.
- Stir in cocoa powder, flour, salt, and baking powder until just combined. Do not overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Let the brownies cool completely in the pan.
- Arrange halved strawberries cut-side down over the cooled brownies.
- In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add chocolate chips. Let sit for 2 minutes, then stir until smooth to make ganache.
- Pour the ganache over the strawberries and spread evenly. Chill in the fridge for at least 1 hour before slicing and serving.
Notes
- Make sure brownies are completely cool before adding strawberries and ganache.
- Use high-quality chocolate for a richer ganache flavor.
- Store in the refrigerator for up to 3 days.
