Description

Chickpea Sloppy Joes are a delicious and hearty plant-based version of the classic sloppy joe. Made with chickpeas and a flavorful tomato-based sauce, this recipe is a perfect vegan and vegetarian alternative to the traditional beef sloppy joe.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 2 tablespoons tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce (vegan if necessary)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/2 cup vegetable broth or water
  • 4 hamburger buns
  • Salt to taste

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onion and bell pepper, and sauté for 5-7 minutes until softened.
  2. Add garlic and sauté for another 1-2 minutes until fragrant.
  3. Add chickpeas, tomato sauce, tomato paste, brown sugar, apple cider vinegar, Worcestershire sauce, paprika, chili powder, cumin, and black pepper. Stir well to combine.
  4. Pour in vegetable broth or water, and bring the mixture to a simmer. Let it cook for 10-15 minutes, stirring occasionally, until the sauce thickens and the chickpeas are softened.
  5. Use a potato masher or fork to mash the chickpeas slightly, leaving some whole for texture.
  6. Toast the hamburger buns until golden brown.
  7. Season the chickpea mixture with salt to taste. Spoon the mixture onto the toasted buns and serve immediately.

Notes

  • You can adjust the level of spice by adding more or less chili powder and paprika.
  • For a more meaty texture, you can mash the chickpeas more thoroughly.
  • These sloppy joes can be stored in an airtight container in the fridge for up to 3 days.
