Rice and Sauce
- ½ c. butter (1 stick)
- 2 tbsp minced garlic
- ¼ tsp red pepper flakes
- 1 ½ c. white rice (uncooked)
- ½ c. dry white wine (such as Pinot Grigio)
- 3 c. chicken broth
- ½ c. Parmesan cheese (grated or shredded)
- Fresh parsley, for garnish (optional)
Instructions
- Sear the Chicken: In a large skillet, heat olive oil over medium heat. Season chicken tenders with garlic powder, half of the salt, and pepper. Sear chicken in the hot oil until browned on the outside and cooked through inside, about 3-4 minutes per side. Remove the chicken from skillet and set aside.
- Sauté Garlic and Prepare Sauce: In the same skillet, melt the butter over medium heat. Add minced garlic, red pepper flakes, and the remaining salt, sautéing until fragrant, about 1-2 minutes. Pour in the white wine and cook for 5 minutes, allowing the sauce to reduce slightly. Reserve a small amount of this sauce for drizzling later.
- Cook the Rice: Add the uncooked white rice to the skillet, stirring to coat it in the buttery garlic sauce. Pour in chicken broth and bring the mixture to a boil. Reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed, approximately 15-20 minutes.
- Combine and Rest: Once rice is cooked, sprinkle grated Parmesan cheese evenly over the rice. Arrange the cooked chicken tenders on top, cover the skillet, and let it stand off the heat for a few minutes to allow flavors to meld.
