Description

A hearty and nutritious one-pan meal combining tender chicken with sweet potatoes, seasoned with savory spices and cooked to perfection.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into cubes
  • 2 medium sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup chicken broth
  • 1 tbsp chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken cubes, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.
  3. In the same skillet, add diced onion and garlic. Sauté for 2-3 minutes until fragrant.
  4. Add sweet potatoes, smoked paprika, cumin, chili powder, and stir to combine.
  5. Pour in chicken broth, cover the skillet, and let it cook for about 10-12 minutes or until sweet potatoes are tender.
  6. Return the cooked chicken to the skillet and stir to combine. Cook for an additional 2-3 minutes until heated through.
  7. Garnish with fresh parsley if desired and serve warm.

  • Add bell peppers or spinach for extra vegetables.
  • Use vegetable broth for a slightly different flavor or to make it lower in sodium.
