- 1 lb boneless, skinless chicken breasts, cut into cubes
- 2 medium sweet potatoes, peeled and diced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1/4 tsp chili powder
- Salt and pepper to taste
- 1/4 cup chicken broth
- 1 tbsp chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken cubes, season with salt and pepper, and cook until browned and cooked through. Remove and set aside.
- In the same skillet, add diced onion and garlic. Sauté for 2-3 minutes until fragrant.
- Add sweet potatoes, smoked paprika, cumin, chili powder, and stir to combine.
- Pour in chicken broth, cover the skillet, and let it cook for about 10-12 minutes or until sweet potatoes are tender.
- Return the cooked chicken to the skillet and stir to combine. Cook for an additional 2-3 minutes until heated through.
- Garnish with fresh parsley if desired and serve warm.
