Description
A comforting, cheesy tater tot casserole made with seasoned ground beef, Rotel tomatoes, and a crispy golden top of baked tater tots.

- 1 lb ground beef
- 1 small onion, chopped
- 1 can (10 oz) Rotel diced tomatoes and green chilies, drained
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with cooking spray.
- In a skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and onion is soft. Drain excess fat.
- Stir in the drained Rotel, cream of mushroom soup, and sour cream. Mix until well combined and heated through. Season with salt and pepper.
- Spread the beef mixture evenly in the prepared baking dish.
- Sprinkle 1 cup of shredded cheddar cheese over the beef layer.
- Arrange the frozen tater tots in a single layer on top.
- Bake uncovered for 35-40 minutes or until the tater tots are golden brown and crispy.
- Sprinkle the remaining 1 cup of cheddar cheese over the casserole and return to oven for 5-10 minutes, or until cheese is melted and bubbly.
- Let rest for a few minutes before serving.
Notes
- You can substitute ground turkey or chicken for ground beef.
- Use spicy Rotel for an extra kick.
- Add green beans or corn for added vegetables.
