- 8 slices of sourdough or thick white bread
Shrimp Mixture
- 1 pound raw shrimp (peeled, deveined, tails removed)
- 2 tablespoons butter (plus more for spreading)
- 3 garlic cloves (minced)
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
- 1 tablespoon chopped parsley

- 1 cup shredded mozzarella cheese
- 1 cup shredded sharp cheddar cheese
- ½ cup shredded Parmesan cheese
Instructions
- Prepare the Shrimp: In a skillet over medium heat, melt 2 tablespoons of butter. Add the minced garlic and sauté for 30 seconds until fragrant. Add the raw shrimp, red pepper flakes if using, lemon juice, salt, and black pepper. Cook for 3 to 4 minutes until the shrimp turn pink and are cooked through.
- Chop the Shrimp: Remove the skillet from heat, and chop the cooked shrimp into bite-sized pieces to make it easier to layer in the sandwich.
- Mix the Filling: In a bowl, combine the shredded mozzarella, sharp cheddar, Parmesan cheese, chopped shrimp, and chopped parsley. Mix well to evenly distribute all ingredients.
- Butter the Bread: Butter one side of each bread slice generously. This side will become the crispy, golden exterior of the grilled cheese.
- Assemble and Grill Sandwiches: Place 4 slices of bread, buttered side down, on a skillet or griddle heated to medium. Evenly spread the shrimp-cheese mixture on top of these bread slices. Top with the remaining bread slices, buttered side up.
