Description

These Cheesy Beef and Mushroom Pita Pockets with Tzatziki Sauce are a hearty Mediterranean-style meal. Juicy ground beef and tender mushrooms are cooked with savory spices, topped with melted cheese, and stuffed into pita bread with fresh veggies and cool, creamy tzatziki.


Ingredients

  • 1 lb ground beef
  • 1 cup mushrooms, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 cup shredded cheddar or mozzarella cheese
  • 4 pita pockets
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper, to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
  2. Add minced garlic and cook for another minute.
  3. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  4. Stir in sliced mushrooms and cook for 5-7 minutes until tender. Season with salt and pepper.
  5. Add shredded cheese and mix until melted and combined. Remove from heat.
  6. In a bowl, mix Greek yogurt, grated cucumber, chopped dill, lemon juice, salt, and pepper to make the tzatziki sauce. Chill until ready to use.
  7. Warm pita pockets and fill with shredded lettuce, diced tomato, and the cheesy beef and mushroom mixture.
  8. Top with tzatziki sauce and serve immediately.
