These Cheesy Beef and Mushroom Pita Pockets with Tzatziki Sauce are a hearty Mediterranean-style meal. Juicy ground beef and tender mushrooms are cooked with savory spices, topped with melted cheese, and stuffed into pita bread with fresh veggies and cool, creamy tzatziki.
Ingredients
- 1 lb ground beef
- 1 cup mushrooms, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 cup shredded cheddar or mozzarella cheese
- 4 pita pockets
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
- Add minced garlic and cook for another minute.
- Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in sliced mushrooms and cook for 5-7 minutes until tender. Season with salt and pepper.
- Add shredded cheese and mix until melted and combined. Remove from heat.
- In a bowl, mix Greek yogurt, grated cucumber, chopped dill, lemon juice, salt, and pepper to make the tzatziki sauce. Chill until ready to use.
- Warm pita pockets and fill with shredded lettuce, diced tomato, and the cheesy beef and mushroom mixture.
- Top with tzatziki sauce and serve immediately.
