Description

Buffalo Chicken Bites are crispy, bite-sized pieces of chicken tossed in tangy buffalo sauce. Perfect as a crowd-pleasing appetizer for game days, parties, or casual snacking.


Ingredients

  • 1 lb chicken breasts or tenders
  • 1 cup buffalo sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1.5 cups breadcrumbs (panko preferred)
  • Oil for frying (or cooking spray if baking)
  • Ranch or blue cheese dressing, for dipping


Instructions

  1. Preheat oven to 400°F (200°C) or heat oil in a deep skillet to 350°F (175°C).
  2. Cut chicken into bite-sized pieces and season with salt, pepper, garlic powder, and onion powder.
  3. Set up a dredging station with flour, beaten eggs, and breadcrumbs in separate bowls.
  4. Dip each chicken piece in flour, then egg, then coat with breadcrumbs.
  5. For frying: Fry chicken bites in hot oil until golden and cooked through, about 4-5 minutes. Drain on paper towels.
  6. For baking: Place breaded bites on a lined baking sheet, spray lightly with cooking spray, and bake for 15-18 minutes, flipping halfway through, until golden and cooked through.
  7. Toss cooked bites in warm buffalo sauce until evenly coated.
  8. Serve immediately with ranch or blue cheese dressing.
