Ingredients
- 1 lb chicken breasts or tenders
- 1 cup buffalo sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1.5 cups breadcrumbs (panko preferred)
- Oil for frying (or cooking spray if baking)
- Ranch or blue cheese dressing, for dipping
Instructions
- Preheat oven to 400°F (200°C) or heat oil in a deep skillet to 350°F (175°C).
- Cut chicken into bite-sized pieces and season with salt, pepper, garlic powder, and onion powder.
- Set up a dredging station with flour, beaten eggs, and breadcrumbs in separate bowls.
- Dip each chicken piece in flour, then egg, then coat with breadcrumbs.
- For frying: Fry chicken bites in hot oil until golden and cooked through, about 4-5 minutes. Drain on paper towels.
- For baking: Place breaded bites on a lined baking sheet, spray lightly with cooking spray, and bake for 15-18 minutes, flipping halfway through, until golden and cooked through.
- Toss cooked bites in warm buffalo sauce until evenly coated.
- Serve immediately with ranch or blue cheese dressing.
