Description

Buckeye Pie is a rich and creamy no-bake dessert inspired by the classic Buckeye candy, featuring a luscious peanut butter filling and a silky chocolate ganache topping on a crunchy cookie crust.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup heavy cream
  • 1 1/4 cups semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. In a bowl, mix chocolate cookie crumbs and melted butter. Press the mixture into a 9-inch pie dish. Chill in the refrigerator for 30 minutes.
  2. In another bowl, beat peanut butter, softened butter, powdered sugar, vanilla extract, and salt until smooth and creamy.
  3. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture.
  4. Spoon the peanut butter filling into the chilled crust and smooth the top. Chill for at least 1 hour.
  5. For the ganache, heat 1/2 cup heavy cream until just boiling, then pour over chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth.
  6. Pour the ganache over the peanut butter filling and spread evenly. Chill the pie for at least 2 more hours or until set.
  7. Slice and serve chilled. Optional: garnish with chopped peanuts or a drizzle of melted peanut butter.

  • Make sure the pie is thoroughly chilled for clean slices.
  • Use smooth, shelf-stable peanut butter for best consistency.
