Buckeye Pie is a rich and creamy no-bake dessert inspired by the classic Buckeye candy, featuring a luscious peanut butter filling and a silky chocolate ganache topping on a crunchy cookie crust.

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1 cup heavy cream
- 1 1/4 cups semi-sweet chocolate chips
- 1/2 cup heavy cream (for ganache)
Instructions
- In a bowl, mix chocolate cookie crumbs and melted butter. Press the mixture into a 9-inch pie dish. Chill in the refrigerator for 30 minutes.
- In another bowl, beat peanut butter, softened butter, powdered sugar, vanilla extract, and salt until smooth and creamy.
- In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture.
- Spoon the peanut butter filling into the chilled crust and smooth the top. Chill for at least 1 hour.
- For the ganache, heat 1/2 cup heavy cream until just boiling, then pour over chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth.
- Pour the ganache over the peanut butter filling and spread evenly. Chill the pie for at least 2 more hours or until set.
- Slice and serve chilled. Optional: garnish with chopped peanuts or a drizzle of melted peanut butter.

- Use smooth, shelf-stable peanut butter for best consistency.
