Instructions

  2. Blend Initial Mixture: Drain the soaked dates and place them in a food processor along with the sunflower seed butter and vanilla extract. Blend until the mixture resembles a thick, sticky caramel consistency.
  3. Add Remaining Ingredients: Add the protein powder, cocoa powder, and a pinch of salt to the food processor. Blend again, stopping periodically to scrape down the sides, until all ingredients are fully combined into a smooth dough.
  4. Form the Bites: Scoop the filling dough and roll it into balls approximately one tablespoon in size each.
  5. Chill the Bites: For best results, place the formed balls on a lined baking sheet and freeze them for at least 30 minutes to firm up.
  6. Melt the Chocolate Coating: In a small microwavable bowl, combine dark chocolate and coconut oil. Microwave on high in 20-30 second intervals, stirring between each, until melted and smooth.
  7. Dip and Set: Dip each chilled protein bite individually into the melted chocolate ensuring they are coated. Return them to the lined baking sheet and allow the chocolate to set before serving.
