- 1/4 tsp black pepper

Instructions
- Preheat the oven: Set your oven to 220°C/425°F for a standard oven or 200°C/400°F if using a fan-assisted oven to ensure it reaches the perfect temperature for roasting.
- Prepare the carrots: Cut the peeled carrots diagonally into pieces approximately 4cm (1.75 inches) in length. Halve the thicker ends so that all pieces are roughly uniform in width, ensuring even cooking.
- Toss with glaze ingredients: In a large bowl, combine the carrots with brown sugar, melted butter (or olive oil), minced garlic, olive oil, salt, and black pepper. Mix well to coat all carrot pieces evenly with the glaze.
- Roast the carrots: Spread the glazed carrots evenly on a baking tray in a single layer. Roast in the preheated oven for 15 minutes. After 15 minutes, toss the carrots to coat with any glaze left on the tray, then continue roasting for another 10 minutes until the carrots are tender, caramelized on the edges, and the glaze is thickened.
- Finish and serve: Toss the carrots again in the remaining glaze on the tray to coat them well. Optionally, sprinkle chopped parsley over the carrots before serving them warm as a deliciously sweet and savory side dish.
