Description

A comforting, one‑dish casserole combining tender chicken, fluffy rice, broccoli, and gooey cheese — perfect for an easy family dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets, steamed
  • 2 cups cooked rice (white or brown)
  • 1 (10.5 oz) can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese, plus ½ cup for topping
  • ½ cup milk
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper, to taste
  • Optional: ¼ cup breadcrumbs or crushed crackers for topping


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13‑inch baking dish.
  2. In a large bowl, mix soup, sour cream, milk, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in shredded chicken, cooked rice, steamed broccoli, and 1 cup cheddar cheese.
  4. Pour mixture into prepared baking dish and spread evenly.
  5. Sprinkle remaining ½ cup cheddar (and breadcrumbs if using) over the top.
  6. Bake uncovered for 25–30 minutes, until bubbly and heated through, and topping is lightly golden.
  7. Let rest 5 minutes before serving.

Notes

  • Leftover rice and cooked chicken work great to save prep time.
