Instructions

  1. Cook the Pasta: Boil the elbow macaroni in salted water according to package instructions until al dente. Drain well and set aside.
  2. Make the Roux: In a medium saucepan over medium heat, melt the butter. Whisk in the flour constantly for 1 to 2 minutes until smooth and lightly bubbling to cook out the raw flour taste.
  3. Add Milk and Thicken: Gradually pour in the whole milk while whisking vigorously to prevent lumps. Continue cooking and stirring for 3 to 5 minutes until the sauce thickens slightly.
  4. Season and Add Cheese: Reduce heat to low; stir in salt, black pepper, garlic powder, and Dijon mustard if using. Add Brie chunks, shredded cheddar, and grated Parmesan. Stir continuously until all cheeses melt and the sauce becomes smooth and creamy.
  5. Combine Pasta and Sauce: Add the cooked and drained pasta into the cheese sauce. Stir gently to completely coat the pasta. Cook for an additional 1 to 2 minutes to heat through.
