Ingredients
Scale
Pasta
- 8 ounces elbow macaroni or pasta of choice
Cheese Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 6 ounces Brie cheese (rind removed), cut into chunks
- 1 cup shredded sharp white cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon Dijon mustard (optional)
Garnish
- Chopped fresh parsley for garnish (optional)
Instructions
- Cook the Pasta: Prepare the elbow macaroni according to the package instructions until al dente. Drain well and set aside.
- Make the Roux: In a medium saucepan, melt the unsalted butter over medium heat. Add the all-purpose flour and whisk continuously for 1 to 2 minutes until smooth and lightly cooked to eliminate raw flour taste.
- Add Milk and Thicken Sauce: Gradually pour in the whole milk while whisking constantly to avoid lumps. Continue cooking and stirring for 3 to 5 minutes until the mixture thickens slightly into a creamy base.
- Season and Add Cheese: Reduce heat to low and stir in salt, black pepper, garlic powder, and Dijon mustard if using. Add the Brie chunks, shredded sharp white cheddar, and grated Parmesan cheese. Stir continuously until all the cheeses have melted and the sauce is completely smooth.
- Combine Pasta and Sauce: Add the drained macaroni to the cheese sauce and gently stir to coat all the pasta evenly. Cook for an additional 1 to 2 minutes until warmed through.
- Serve: Immediately plate the mac and cheese and garnish with chopped fresh parsley if desired. For an extra touch, top with breadcrumbs and broil briefly until golden and crispy.
Notes
- For extra flavor and texture, top the mac and cheese with breadcrumbs and broil for 2 to 3 minutes until golden brown.
- Substitute some of the milk with half-and-half or cream to create a richer, creamier sauce.
- Brie pairs wonderfully with additions such as caramelized onions, crispy bacon, or roasted vegetables stirred into the mac and cheese.
