Description
Bread and Butter Jalapeño Pickles are a sweet, tangy, and mildly spicy preserve made with sliced cucumbers, jalapeños, and onions steeped in a flavorful vinegar brine. This quick-pickling recipe delivers perfectly crunchy pickles that balance heat with sweetness, ideal for sandwiches, burgers, or snacking.
Ingredients
Scale
Vegetables
- 4 cups sliced cucumbers (small pickling cucumbers)
- 2 cups sliced fresh jalapeños
- 1 large sweet onion, thinly sliced
Brine
- 1 cup white vinegar
- 1 cup granulated sugar
- 1 tablespoon kosher salt
- 1 teaspoon mustard seeds
- 1 teaspoon coriander seeds
Instructions
- Prepare Ingredients: Wash the cucumbers and jalapeños thoroughly. Slice the cucumbers into spears or slices as desired and slice the jalapeños into rings using gloves to protect your skin from the spice.
- Make the Brine: In a medium saucepan, combine the white vinegar, granulated sugar, kosher salt, mustard seeds, and coriander seeds over medium heat. Stir occasionally until the sugar dissolves and the mixture comes to a simmer.
- Pack Jars: Tightly pack the sliced cucumbers, jalapeños, and onions into sterilized jars, layering them evenly.
- Add Hot Brine: Pour the hot vinegar brine over the vegetables in the jars, ensuring all pieces are fully submerged. Leave about half an inch of space at the top of each jar to allow for expansion.
- Seal and Cool: Seal the jars while the brine is still hot. Let the jars sit at room temperature for 30 minutes to cool down and for the flavors to begin infusing.
- Refrigerate and Marinate: Place the sealed jars in the refrigerator and allow to marinate for at least 24 hours before serving to develop the full flavor and crunch.
Notes
- Wear gloves when slicing jalapeños to avoid irritation from the capsaicin.
- For spicier pickles, keep some of the jalapeño seeds in the slices; remove seeds to reduce heat.
- Use sterilized jars to extend shelf life and prevent contamination.
- The pickles will keep in the refrigerator for up to 4 weeks.
- Feel free to adjust the sugar amount for a sweeter or less sweet pickle according to taste.
