Description

Blueberry Peach Feta Salad is a fresh, vibrant summer salad combining sweet peaches, juicy blueberries, tangy feta, and crisp greens. Finished with a light honey-lime vinaigrette, it’s a perfect side dish or light lunch.


Ingredients

  • 4 cups mixed salad greens (spinach, arugula, or spring mix)
  • 2 ripe peaches, sliced
  • 1 cup fresh blueberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped pecans or walnuts (optional)
  • Honey-Lime Vinaigrette:
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 2 tbsp fresh lime juice
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste


Instructions

  1. In a large bowl, add salad greens, peach slices, blueberries, red onion, and nuts if using.
  2. In a small bowl, whisk together olive oil, honey, lime juice, Dijon mustard, salt, and pepper until well combined.
  3. Drizzle vinaigrette over the salad and toss gently to coat.
  4. Top with crumbled feta just before serving. Enjoy immediately.
