Description

This Taco Bell copycat Grilled Cheese Burrito is loaded with seasoned beef, rice, nacho cheese, sour cream, and a crispy grilled cheese outer shell. It’s a satisfying, cheesy, and indulgent meal you can easily make at home.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 cup cooked seasoned rice
  • 1/2 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chipotle sauce (optional)
  • 4 large flour tortillas
  • Butter or oil for grilling

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  2. Add taco seasoning and water to the beef. Stir and simmer for 5 minutes until thickened. Set aside.
  3. Warm the tortillas slightly to make them pliable.
  4. On each tortilla, layer seasoned rice, taco beef, nacho cheese sauce, sour cream, and a drizzle of chipotle sauce if using.
  5. Fold in the sides of the tortilla and roll it up into a burrito.
  6. Sprinkle shredded cheddar and mozzarella cheese onto a non-stick skillet over medium heat, forming a layer the size of a burrito.
  7. Place the burrito seam-side down onto the melted cheese. Let it cook until the cheese adheres and becomes golden and crispy, about 2–3 minutes.
  8. Flip and grill the other side for 1–2 minutes if desired.
  9. Remove and serve hot with extra nacho cheese or salsa.

Notes

  • You can add beans or jalapeños for extra flavor and heat.
  • Use leftover rice to save prep time.
  • Make it vegetarian by substituting beef with seasoned beans or plant-based meat.
