- 1 medium cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 cup BBQ sauce
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 cup cooked quinoa or brown rice
- 1/2 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup chopped cilantro
- 1/4 cup avocado, sliced
- 1 tbsp lime juice
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss cauliflower florets with olive oil, BBQ sauce, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Spread the cauliflower on a baking sheet lined with parchment paper and bake for 20-25 minutes, until crispy and golden, flipping halfway through.
- While the cauliflower is baking, prepare the quinoa or rice and place it in serving bowls.
- Once the cauliflower is done, remove from the oven and place it on top of the quinoa or rice in the bowls.
- Top with corn, diced tomatoes, green onions, cilantro, and avocado slices.
- Drizzle with lime juice before serving.
Notes
- Feel free to use any BBQ sauce of your choice for different flavor variations.
- For extra protein, add black beans or chickpeas to the bowl.
- If you want to make this a vegan dish, ensure the BBQ sauce is plant-based.
