Ingredients
- 1 lb boneless chicken breasts, cut into bite-sized pieces
- 1/2 cup cornstarch
- 1/2 cup all-purpose flour
- 1/2 cup buttermilk
- 2 large eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Oil for frying
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1-2 tbsp sriracha or hot sauce (to taste)
- 1 tbsp honey
- 2 green onions, chopped, for garnish
Instructions
- Cut the chicken into bite-sized pieces and season with salt, pepper, and garlic powder.
- In one bowl, whisk together the eggs and buttermilk. In another bowl, combine the flour and cornstarch.
- Dip each chicken piece into the egg mixture, then dredge in the flour-cornstarch mixture until fully coated.
- Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the chicken in batches for 4-5 minutes until golden brown and cooked through.
- In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey to make the bang bang sauce.
- Toss the hot fried chicken pieces in the sauce until fully coated.
- Garnish with chopped green onions and serve immediately.
