- 2 ripe bananas, mashed
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
- 1/2 cup milk, warm
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 tsp salt
- 2 1/2 – 3 cups all-purpose flour
- 1/2 cup brown sugar (for filling)
- 1 tbsp ground cinnamon
- 2 tbsp unsalted butter, softened (for filling)
- 4 oz cream cheese, softened
- 2 tbsp unsalted butter, softened (for frosting)
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- 1–2 tbsp milk (for desired frosting consistency)
Instructions
- In a small bowl, mix warm milk and yeast. Let it sit for 5-10 minutes until foamy.
- In a large bowl, combine mashed bananas, granulated sugar, brown sugar, melted butter, and salt. Add in yeast mixture and stir to combine.
- Gradually add flour, one cup at a time, mixing until a soft dough forms. Knead on a floured surface for about 5 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
- Roll out the dough into a rectangle. Spread with softened butter, sprinkle evenly with brown sugar and cinnamon.
- Roll up the dough tightly and cut into 12 even rolls. Place in a greased baking dish. Cover and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes or until golden brown.
- While rolls bake, make the frosting: beat cream cheese and butter together until smooth. Add powdered sugar, vanilla, and milk, mixing until creamy.
- Let rolls cool slightly before spreading with cream cheese frosting. Serve warm.
Notes
- Use very ripe bananas for best flavor.
- You can add chopped nuts or chocolate chips to the filling for extra texture.
- Store leftovers in an airtight container and reheat slightly before serving.
