Description

Baklava Cream Sandwich Cookies combine the rich, spiced nut flavors of classic baklava with buttery cookies and a luscious cream filling, creating an elegant, indulgent treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 cup finely chopped walnuts or pistachios
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 2 tbsp heavy cream


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream the butter and granulated sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until smooth.
  4. Gradually add the flour and salt, mixing until a soft dough forms.
  5. Roll the dough out on a floured surface and cut into rounds with a cookie cutter.
  6. Place cookies on the prepared baking sheet and bake for 8-10 minutes, until edges are lightly golden. Cool completely.
  7. In a bowl, combine finely chopped nuts with honey, cinnamon, and cardamom for the baklava filling.
  8. For the cream filling, beat cream cheese and powdered sugar until smooth. Fold in heavy cream until fluffy.
  9. Spread cream filling onto the bottom of one cookie, add a spoonful of baklava nut mixture, then top with another cookie to make a sandwich.
  10. Repeat with remaining cookies. Drizzle with extra honey if desired and serve.
