Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 cup honey
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cardamom
- 1 cup finely chopped walnuts or pistachios
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 2 tbsp heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream the butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until smooth.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Roll the dough out on a floured surface and cut into rounds with a cookie cutter.
- Place cookies on the prepared baking sheet and bake for 8-10 minutes, until edges are lightly golden. Cool completely.
- In a bowl, combine finely chopped nuts with honey, cinnamon, and cardamom for the baklava filling.
- For the cream filling, beat cream cheese and powdered sugar until smooth. Fold in heavy cream until fluffy.
- Spread cream filling onto the bottom of one cookie, add a spoonful of baklava nut mixture, then top with another cookie to make a sandwich.
- Repeat with remaining cookies. Drizzle with extra honey if desired and serve.
