Description

This Bagel Chicken with Roasted Veggies is a simple, flavorful one-sheet-pan meal featuring juicy chicken breasts seasoned with everything bagel spices and paired with vibrant roasted vegetables. Perfect for a quick and healthy dinner, it brings a delightful crunch and savory seasoning that’s both comforting and wholesome.

Ingredients

Scale

For the Chicken

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 2 tablespoons everything bagel seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Roasted Veggies

  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare the Chicken Seasoning: In a small bowl, mix together olive oil, everything bagel seasoning, garlic powder, paprika, salt, and black pepper. Rub this seasoning mixture evenly all over the chicken breasts or thighs to fully coat them with flavor.
  3. Toss the Vegetables: In a separate bowl, combine broccoli florets, sliced red bell pepper, zucchini, and red onion wedges. Toss with olive oil, salt, and pepper until all the vegetables are evenly coated with the oil and seasonings.
  4. Arrange on Baking Sheet: Place the seasoned chicken on one side of the prepared baking sheet. Spread out the tossed vegetables in a single layer on the other side of the sheet to ensure even roasting.
  5. Roast in the Oven: Roast everything for 25–30 minutes. Flip the vegetables halfway through the cooking time to ensure they char evenly. The chicken is cooked when it reaches an internal temperature of 165°F (74°C) and the vegetables are tender with slight charring.
  6. Rest and Serve: Remove the chicken and veggies from the oven and let the chicken rest for 5 minutes to lock in juices. Slice the chicken and serve alongside the roasted vegetables. Optionally, drizzle with fresh lemon juice or add a dollop of Greek yogurt for extra creaminess.

Notes

  • You can use bone-in chicken pieces, but increase the cooking time to ensure they cook through.
  • For extra color and flavor, include sweet potatoes or cherry tomatoes in the vegetable mix.
  • Everything bagel seasoning adds texture and flavor without the need for additional sauces, making this meal both crunchy and savory.
