Description

This colorful and delicious Arugula Salad features peppery arugula tossed in a quick vinaigrette and topped with sweet beets, juicy oranges, crunchy pecans, and creamy feta cheese.


Ingredients

  • 5 oz (about 5 cups) fresh arugula
  • 2 medium cooked beets, sliced or cubed
  • 2 oranges, peeled and segmented
  • 1/2 cup pecans, toasted
  • 1/3 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey (optional)
  • Salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, balsamic vinegar, honey (if using), salt, and black pepper to make the dressing.
  2. In a large salad bowl, add the arugula and drizzle with the dressing. Toss gently to coat.
  3. Add the sliced beets, orange segments, toasted pecans, and crumbled feta cheese on top of the arugula.
  4. Gently toss again or serve with toppings layered for presentation.
  5. Serve immediately and enjoy!

Notes

  • You can use pre-cooked beets or roast fresh beets beforehand.
  • For a vegan version, omit the feta or use a plant-based alternative.
