Description

Apple Spiced Stuffed Sweet Potatoes are tender baked sweet potatoes filled with a warm, spiced apple-cinnamon mixture and topped with crunchy pecans—perfect for a hearty side or cozy dessert.


Ingredients

  • 4 medium sweet potatoes
  • 2 tbsp butter or coconut oil
  • 2 cups apples, peeled and diced (e.g., Gala or Honeycrisp)
  • 2 tbsp brown sugar or maple syrup
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of salt
  • ½ cup chopped pecans (optional)
  • Optional toppings: Greek yogurt or whipped cream, maple drizzle


Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and pierce several times with a fork.
  2. Place on a baking sheet and bake for 45–60 minutes, until tender when pierced.
  3. While potatoes bake, heat butter or coconut oil in a skillet over medium heat.
  4. Add diced apples, brown sugar or maple syrup, cinnamon, nutmeg, and salt. Cook for 5–7 minutes until apples are softened and slightly caramelized.
  5. Stir in chopped pecans and remove from heat.
  6. When sweet potatoes are done, slice each lengthwise and gently fluff the insides with a fork.
  7. Spoon the warm spiced apple mixture into each sweet potato.
  8. Top with optional garnish: a dollop of Greek yogurt or whipped cream and a drizzle of maple syrup.
  9. Serve warm as a side dish or light dessert.

  • Use tart apples (Granny Smith) for contrast or sweet varieties depending on your taste.
