- 8 egg roll wrappers

Instructions
- Cook the Apple Filling: In a medium skillet over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5–7 minutes until the apples soften and begin to release juices. Stir in the cornstarch slurry and continue cooking for 1–2 minutes until the mixture thickens. Remove from heat and let the filling cool slightly.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface with one corner pointing towards you, forming a diamond shape. Spoon 2–3 tablespoons of the cooled apple filling near the center. Fold the bottom corner over the filling, then fold in the left and right corners snugly, and roll tightly towards the top corner. Seal the edge with a small dab of water to prevent opening during frying. Repeat assembly with the remaining wrappers and filling.
- Heat Oil for Frying: Pour about 2 inches of vegetable oil into a deep skillet or pot and heat to 350°F (175°C). Use a thermometer to maintain the temperature for even frying.
- Fry the Egg Rolls: Carefully place egg rolls in the hot oil in batches, frying for 2–3 minutes per side or until they turn a deep golden brown and crispy. Turn them gently with tongs or a slotted spoon to ensure even color.
- Drain and Serve: Remove the fried egg rolls from the oil and place them on paper towels to drain excess oil. Dust with powdered sugar or cinnamon sugar if desired. Serve warm for the best flavor and texture.
