Description

A soft and chewy sugar cookie cake decorated with cream cheese frosting and fresh berries to resemble the American flag. A perfect festive treat for patriotic holidays like the Fourth of July.

  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 teaspoon salt (for frosting)
  • 1/2 cup fresh blueberries
  • 1 cup sliced strawberries

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper or lightly grease it.
  2. Cream together the butter and sugar until fluffy. Beat in the egg and vanilla.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until a dough forms.
  4. Press the dough evenly into the prepared pan. Bake for 18–22 minutes or until lightly golden. Cool completely.
  5. Make the frosting by beating cream cheese and butter together until smooth. Add powdered sugar, vanilla, and salt. Beat until creamy.
  6. Spread the frosting evenly over the cooled cookie base.
  7. Arrange blueberries in the top left corner for the “stars.” Use strawberry slices to form horizontal red stripes.
  8. Chill until ready to serve. Cut into squares and enjoy!

Notes

  • Chill the cookie cake before decorating to keep the frosting firm.
  • Pat the berries dry to prevent bleeding into the frosting.
  • Can be made a day ahead and refrigerated.
