- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract

- 1 teaspoon baking powder

- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 1/4 teaspoon salt (for frosting)
- 1/2 cup fresh blueberries
- 1 cup sliced strawberries
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper or lightly grease it.
- Cream together the butter and sugar until fluffy. Beat in the egg and vanilla.
- In a separate bowl, whisk flour, baking powder, and salt. Gradually mix into the wet ingredients until a dough forms.
- Press the dough evenly into the prepared pan. Bake for 18–22 minutes or until lightly golden. Cool completely.
- Make the frosting by beating cream cheese and butter together until smooth. Add powdered sugar, vanilla, and salt. Beat until creamy.
- Spread the frosting evenly over the cooled cookie base.
- Arrange blueberries in the top left corner for the “stars.” Use strawberry slices to form horizontal red stripes.
- Chill until ready to serve. Cut into squares and enjoy!
Notes
- Chill the cookie cake before decorating to keep the frosting firm.
- Pat the berries dry to prevent bleeding into the frosting.
- Can be made a day ahead and refrigerated.
